Pétillant naturel, or pét-nat, is a way of producing sparkling wine. The fermentation happens inside the bottle, where the CO2 gets trapped and dissolves into the wine.
Since the wine is bottled early, it is difficult to monitor and control. There is always an element of unpredictability, which is a part of its mystery and fun.
This pét-nat is lively and refreshing. It’s made from the grapes that grow in our nursery row, and has bright aromas of raspberries.
